Rick Stein has been busy exploring the best of Spanish cuisine in his latest BBC 2 series – and Vida London has two copies of his book to give away.

Rick Stein’s Spain is the Padstow-based chef’s latest culinary adventure. “I’ve wanted to make a series in Spain for a long time. I love Spanish food and I’ve been going there since I was a young boy – but until quite recently I don’t think people really took the food seriously,” Rick says.

The first episode of Rick Stein’s Spain covered the northern coast while episode two saw Rick delving into the food on offer in the Basque Country and Cataluna. Episode three focused on Valencia and central Spain, while the series finishes on 4 August with a romp through Andalucia.

Rick Stein’s Spain (£25; BBC Books) features 140 recipes inspired by Rick’s travels, along with 100 photos. This giveaway comes courtesy of the fine people at Ebury Publishing/BBC Books!

    I love the humble potato tortilla – easy to make and goes with anything. And yet by itself tasty when warm and somehow even better cold the next day!

    Gambas Ajillo is my favourite dish, because I adore prawns, and garlic makes everything taste wonderful. The smell wafts me to my favourite place in Spain: Burriana Beach, in Nerja.

    It has got to be Zarzuela de Pescado, it’s a Catalan seafood stew, we had it on holiday and I went back to the same restaurant twice! It’s full of different fish and shellfish, and it smells divine!! Lovely blog you have by the way 🙂

    There’s something so inherently satisfying in making one-pot dishes and my particular favourites are those that lie somewhere between a soup and a stew, between the spoon and the fork. And what could be more representative of the glorious peasant cookery of Spain than pork, legumes and greens?

    So, although it’s hardly an authentic cocido, my dish would be chorizo, chickpea and cabbage soup. This is something I often make in the winter months. As well as the three main ingredients there’ll be onions, potatoes, tomatoes, water or stock and a squeeze of lemon. If I have a ham knuckle or a pig’s trotter, it’ll go in for flavour and substance. A thick slice of sourdough bread is the only required accompaniment.

    And here’s another answer to the ‘why’ in your question. Apart from being hearty and delicious, this dish is, like so much of Spanish cooking, cheap. I am unable to work and live on benefits, It breaks my heart that, in this country, good food is seen as the preserve of the middle class, of the dinner party and the supper club. Eating well provides sustenance for the soul as well as the body. This is never more important than when you find yourself down in the abyss.

    This dish is both tasty and restorative.

    Frito mixto on the Costa del la Luz. Nothing typifies Spain more than fresh food simply cooked.
    (With an honourable mention for chuuros con chocolat for breakfast)

    Favourite spanish dish must be Hake Fillets with Clams in Salsa Verde
    (Merluza y almejas en salsa verde)

    Calamares en su tinta – as part of a massive selection of tapas. Rich, dark and very mouth-satisfying, it transports me to my first holiday in Spain, in the 1960s, to Torremolinos when it had one hotel (five star), long before it became derided for being a destination for retired English people. Otherwise, its ice-cold gazpacho on a steaming hot day. A glass of chilled amontillado sherry is compulsory with both. Divino!

    Gambas pil pil !! I love prawns especially the lovely big juicy ones, this dish has a comforting yet spice kick that’s great and I love to dip bread into the oil which soaks in all the flavours!

    Salmorejo. Surely there is nothing better in life for breakfast than tomatoes, olive oil and bread? Sums up to me great spanish cooking – simple ingredients coming together to make a lovly dish.

    Roast suckling pig – beautiful moist flesh, awesome crackling and, usually, salty potatoes and a salad, what’s not to like?

    Paella. Even though I’m allergic to muscles, it’s still worth the risk! The mixture of meat and fish and as long as it’s a good one, it’s just so damn addictive!
